Are you sick to death of hops? If so, then sour beers are the furthest thing from it. Don’t let the idea of a “sour” beer churn your guts. The Wall Street Journal describes sour beers as “an acquired taste for most, but a life’s pursuit for a devoted few.”

Basically, what gives a sour beer its unique flavor is the yeast. Most beers are fermented with yeasts selected by brewers for their predictable (and desirable) characteristics. On the other hand, sour beer makers are part cowboy, part mad scientist. They select brettanomyces yeast that is wild, untamed, funky, sweaty and even sometimes unwanted. It’s the last-picked teammate. It’s the ugliest sister. It’s the song you hate but can’t get out of your head.
